My Art and Cooking Pleasures
A number of years ago my marriage of 30 years broke up. After a while I decided to move away from the area we had been living in. I chose to move 600kms away to a time town called Zilzie, up near Rockhampton. I came across a house to rent ( by accident) that was across the road from a tiny but beautiful secluded beach. My dream had been to live really near to a beach so this felt like it was “meant to be”. The house had a huge verander and was high set so you could see and hear the beach from every room. To be honest,I was so overcome and excited to find it that I never noticed that the house had no wardrobes and hardly any cupboards in it I rented the house for a year, thinking that that would give me time to find myself again and learn what it was like to live alone as I had never done that in all of my life. I wasn’t completely alone as I had my cats!
I so enjoyed living alone, I spent a lot of time doing visual journalling and creating art which was my therapy really. The support from my arty friends was wonderful and we decided to have an art retreat at my house in Zilzie. My friend Annie traveled from USA with her hubby Mike, friends Pearl and Ann came from NSW, and Jill came over from New Zealand. We had the best time. We sewed and taught each other new techniques, some of us drank a lot of wine, we had all the chocolates you could imagine and we laughed and laughed.
Because I knew there would be a lot of cooking to do, I got food ready in advance and froze it. ( this little town did not offer a great deal in the way of resturants or takeout!) One meal that went down a treat was my Turkey Meatballs and Spaghetti, so thats the recipe I am sharing today. Just a quick note. I know Turkey meat is readily available in USA but it is not so easy to find in Australia. I get it at Woolworths in the mince department, it is cheap and very tasty.
Turkey Meatballs and Spaghetti
Ingredients:
Turkey Mince
fresh breadcrumbs
milk
pepper sauce
Chicken stock powder
Spaghetti
2 bottles of your favorite pasta sauce
Parmesan cheese grated
Now:
Put the turkey, pepper sauce, breadcrumbs, chicken stock and milk into a bowl and mix it really well till it is all blended. Leave it to sit for a few minutes till the bead crumbs soak up the milk.
Spoon out balls of the mince into a roasting dish and cook in the oven for about 20 minutes on 300F
Add the jars of pasta sauce to them and stir carefully
Cook the Spaghetti in heaps of salted boiling water till its aldente.
Mix the pasta with the meatball mixure and serve on a huge platter
Sprinkle the parmesan on top.
Serve with garlic bread and a salad.
