So you are in a big rush and are stumped for ideas for dinner. As long as you have a Rice Cooker and can buy a Cooked Chicken then you are ready to go. This dish will take you around 10-20 minutes to make and everyone will love it. This is quite a favorite in our house as its really tasty and filling. Although I do roast whole Chickens myself ( I like to roast two at a time), sometimes I just take the shortcut and buy a cooked Chook ( Australian slang for Chicken) or two.
The other way around this if you are on a budget, or don’t like buying ready made food is to roast a couple of Chickens every now and again and strip the fat off them and them cut them up into chunk sized pieces and freeze them using the freeflow method. This way you can just defrost some of the already cooked Chicken for this recipe.
Ok here we go!
Ingredients:
Cooked and chopped Chicken meat ( quantity to suit)
3 Rice Cooker cups of water
3 Rice Cooker cups of Basmati Rice
1/2 cup Lemon juice
2 teaspoons Chicken Stock Powder
2 Tablespoons of Cornflour/Cornstarch
3 tablespoons of Brown Sugar
11/2 cups water
Now:
Put the rice and the water into the rice cooker and set to cook.
In a saucepan combine the lemon juice, stock powder, cornflour, brown sugar and water. Stir constantly till the mixture boils and thickens now turn down the heat and add the chicken. When the chicken is well heated through serve it up on a bed of rice.
Here are a few variations on the recipe.
1: Add Orange Juice instead of Lemon Juice
2: Add a frozen bag of vegetables to the sauce and chicken mixture.
3: Add coconut cream to the rice instead of water
5: Serve on Pasta instead of Rice.
I am sure that you will use this recipe often, just like I do and you will probably put your own spin on it too. Don’t be scared to try some variations and see what your family thinks of them. I often make a lot of this and freeze meals of it for my husband to take to work for dinner or just if we have no time at all we can reach into the freezer and grab a frozen meal. I think this is especially great as we know there are no preservatives or other yukky stuff in our food this way.
