Easy Home Cooking ~ Satay Chicken
As you will already know, I love my rice cooker. It makes cooking rice perfectly every time so easy. This easy Satay Chicken will take you from nothing to a delicious meal in less than 20 minutes. I think the secret to this dish is the Satay sauce. I buy it in a bottle, the brand I love is Fountain, but you can use any brand. Taste it first to decide if you are happy with it, you can always add some extra peanut butter and some chicken stock powder if you need it. I don’t make my Satay chicken on skewers like you find in Singapore and other asian countries. I like to serve it up as meat in a sauce on top of wonderful Streamed Rice.
Talking about Singapore, years ago when the boys were teenagers we were able to travel there on holiday a couple of times. I had only been back in New Zealand from that holiday when I won a trip for two to Singapore in a radio contest. Its the only thing of value that I have ever won but it was such a fantastic thing as I love Singapore and it meant that my husband and I could go back again in 6 months time.
OK here’s the recipe
Ingredients:
Raw or cooked chicken breasts
1 bottle Satay Sauce
1 can Coconut Cream
Steamed Jasmin Rice
Now:
Dice your chicken and throw it into a wok or pan on fairly high heat to start.
Stirfry it till its golden then add the satay sauce and the coconut cream.
Turn the heat right down to low and add a lid and let simmer for 10 minutes.
Add some water if it gets too think and stir it from time to time.
Serve on Steamed rice.

In Singapore we just loved the outdoor markets at night. It had this special smell with all the food cooking and the people all around. The warmth at night was lovely, coming from New Zealand where its was cold almost all year round. The hotels are so upmarket and beautiful, we felt like we were in total luxury. Then we took a local bus out to the science center, which is a fantastic place for kids. Of course the other favorite thing to do was to lie by the pool and use the swim up bar in the middle of the pool. wow! It was a wonderful holiday we will never forget.
