Easy Lamb Curry

Today I have two wonderful Lamb Curry recipes for you. Don’t forget that if you don’t want it too spicy you can play around with the amounts of spice and curry powder you use. These dishes are wonderful warming winter dishes. They don’t take too long to make and are usually very popular with families.  I love Pappadums and my kids have always loved them too, so whenever I serve up this dish it not only comes with rice but also a big plate of Pappadums. I cook them in the microwave with no oil for 50 seconds each on high. Enjoy these dishes.

Ingredients

  • 1  pound  lean lamb stew meat, trimmed
  • 1  tablespoon  all-purpose flour
  • 1  teaspoon  vegetable oil
  • 3  cups  vertically sliced onion
  • 2  teaspoons  curry powder
  • 1  teaspoon  ground ginger
  • 1/4  teaspoon  ground red pepper
  • 1 1/2  cups  chopped peeled Golden Delicious apple
  • 2  teaspoons  bottled minced garlic
  • 1  (14.5-ounce) can diced tomatoes, undrained
  • 1  (14.5-ounce) can low-salt beef broth

Now:

Place lamb in a medium bowl. Sprinkle with flour, tossing to coat.

Cook the Lamb in a non stick frypan and  cook for 4 minutes or until browned, stirring frequently. Stir in onion, curry, ginger, and pepper; cook for 5 minutes or until onion is tender. Stir in apple, garlic, tomatoes, and broth. Bring to a boil; cover, reduce heat, and simmer for 15 minutes or until the meat is tender. Serve with Steamed Rice.

Easy Lamb Curry 2

Ingredients

1 1/4 c Milk
2 Envelopes instant cream of chicken soup; for ind. servings
1/2 c Sour cream
2 c Cooked cubed lamb
1 1/2 ts Curry powder; (up to 2)
Rice
Condiments

Now:

In a large saucepan, heat milk until steaming. Stir in instant cream of chicken soup with a fork until smooth. Blend in sour cream, lamb and curry powder. Simmer, uncovered, 5-10 minutes until thick. Do not boil. Serve over rice with condiments.
