Low Fat Chicken Recipes ~ Pineapple Chicken
This sweet and tangy Low fat chicken recipe is sure to please your family. If you have those who love hot and spicy add more red pepper flakes, if not, leave them out altogether. The picture is of “the Big Pineapple” not too far from where I live In Queensland. Australia is a big grower of Pineapples and they are very cheap for us in season.
Australia is also home to a number of “The Bigs” for instance The Big Banana is found near Coffs Harbour and The Big Buffalo is found up near Darwin, The Big Cow is also found near Eumundi not far from where I live. There are many more.
The Big Cod is found in Victoria, the Big VB Can ( beer) is found near Darwin……..its hot up there and they are always thristy LOL. The Big Lobster is found in South Australia, the Big Prawn can be found in Ballina NSW, The Big Orange is in Berri in South Australia, the Big Koala can be found in Victoria. There are many more and they are usually built around cafes and they make good places for tourists to stop and have a look around and take photos.
Ingredients:
- 4 5-ounce boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 1 tbsp brown sugar
- 1 tsp minced ginger
- 1/2 tsp crushed red pepper flakes
- 1 8-ounce can crushed pineapple
Now:
Place chicken breasts in a single layer in a baking dish. Combine soy sauce with brown sugar, ginger, crushed pepper and pineapple in a small bowland pour it over the chicken. Bake uncovered at 400F for 25 minutes, basting frequently with juices. Serve with Basmati rice.
