Quick and Easy Vegetarian Food
You could have knocked me over with a feather the day I heard that my son Damon had decided to become a vegetarian. The reason I was so surprised was that hes not keen on vegetables. I have always known that he doesn’t like fish or pork but he was a keen steak eater and likes other meats like ham etc. Anyway Damon is married to the gorgeous Nicole, so I didnt have to worry about preparing that vegetarian food for him. That was lucky! Even though I was surprised, I was happy to support him in this new way of eating although I wasn’t planning on joining him. Damon has kept this up for a number of months now and Nic has gotten used to cooking this way so all is well.
Today I am offering you an easy Vegetarian recipe as I am hearing more and more that it can be healthy to eat a couple of meatless meals every week.
Cabbage and Cheese Pasta Bake
Ingedients
Shredded Cabbage
1 cup cheddar cheese
2 cups cooked pasta ( any kind)
fresh breadcrumbs
Now:
In a baking dish put layers of the cabbage, pasta and grated cheese
Sprinkle the top with breadcrumbs and grated cheese
Bake in the oven at 350F for 10-15 minutes until the top is golden and crisp.

Christmas is 12 weeks away and I am holding Christmas Dinner at my house this year. Because Damon and Nic will be here I need to offer some vegetarian food this year. Because it is so hot here at Christmas I usually have cold roasted meat and have hot roasted vegetables. I probably will do that again this year but I will also add some other non meat items as well, like my Tomato/ onion bake which is delicious.
Heres the recipe.
Tomato/ Onion bake
Ingredients:
2 cans chopped tomatoes
3 big onions
Breadcrumbs
Butter
Grated Cheddar cheese
Now:
I like to cook off the onions in some butter in the microwave, as then the dish cooks a lot quicker.
Layer the onions and the tomatoes in a casserole dish
Sprinkle the grated cheese and the breadcrumbs on top and dot with butter.
Cook in the oven on 350F for about 1 hour till it is bubbling and golden and crisp on the top.
