Today I am going to share with you one of my most favorite recipes. If you want to impress, then this is the quick desert recipe for you. These meringues are crisp and delicate on the outside and then as you bite into them, they are soft and chewy inside. They take less than 10 minutes to prepare and then there is just the cooking time. You will find that these white snowballs don’t last very long at all once the family knows where they are. I suggest you hide them if you want them for a special occasion.
Ingredients:
4 Egg Whites
1 pinch Salt
1 cup Sugar
2 tablespoons Cornflour
1 teaspoon white Vinegar
1 cup whipped Fresh Cream
Now:
Preheat your oven to 120C
Put the Egg Whites and the Salt into an electric mixer bowl and beat on high till you get stiff peaks forming.
Slowly add the sugar while whipping, a tablepoonful at a time until the mixture is really thick and glossy
Add the cornflour and the vinegar at once and beat the mixture for another minute.
Put spoonfuls onto a cookie sheet, you should get around 24.
Bake for 1 hour and 15 minutes then take them out and let them cool.
To serve: Serve 2 together with whipped cream in between.
For variation, you could serve these with fresh strawberries.
A favorite Auntie of mine used to make meringues like these and I used to think she was the most amazing cook as they looked like they would be really difficult to make. Because of this I never even tried to make them until recently. I was so thrilled that they are so easy and come out perfect every time. Ive kept it a bit of a secret how easy they are till now.
My childhood was in New Zealand and one of the most popular deserts in those days was the Pavlova, which is basically the same recipe as these meringues except that instead of making spoonfuls we would lump all the mixture onto a cookie sheet and make a dip in the centre ( like the crator of a volcano). Then we would cook it and after it cooled, pile the whipped cream into the crator and then add grated chocolate or strawberries on the top. It looked just like a winter wonderland and tasted like heaven!
