This was very popular in our family when my boys were smaller (they are grown and left home now). My husband and sons loved anything hot and spicy although I must admit I am not so brave.
It seemed to be a macho thing with them to see who could tolerate the spiciest food and some nights they would all have little beads of sweat above their lips while smiling and saying how much they loved the food.
However with this recipe you can decide just how spicy you want the soup to be. Just change the amount of Worcestershire sauce and Salami to taste.
I keep the ingredients for this soup in my pantry at all times as it can be a lifesaver if I am in a rush or if visitors turn up unexpectedly for lunch. It takes less than 10 minutes to put it together.
Ingredients:
I large can of concentrated tomato soup
1 large can of water
2 Medium sized cans of whole tomatoes
2 Tblspns Worcestershire sauce ( or as much as you need)
A small chub of spicy salami
Now:
Cut the salami into small chunks and put into a large pot.
Add the soup, water and Worcestershire sauce.
Now add the tomatoes and chop them up a bit with a knife.
Heat together stirring occasionally
When everything is hot, serve.
I like to serve this soup with hot garlic bread or hot buttered rolls or Cheese scones
Here is the Cheese Scone recipe
Ingredients:
4 cups Self Raising Flour
300ml pure Cream
1 cup grated cheddar cheese
250ml water
Now:
Mix everything together quickly in a bowl.
Tip the mix out on a floured board and pat it down into a nice square shapes
Cut the scone mix into squares and place them on a cookie sheet
Cook at 200F for 12 minutes
or until they are golden and crisp on the outside.
Serve them buttered YUM!
